HOW IT WORKS

With our mobile paella grill we can set up almost anywhere and feed from 40 to 600 guests. We do all of the prep work on site and bring everything we need to prepare the paella. All you need to do is provide the silverware and plates. It takes about 3 hours from start to finish (actual cooking time is approximately 2 hours). Its fun and festive to have the actual cooking of the paella as the center of the party and we often involve guest in helping to spread ingredients at different stages. Or, if you like, we can be in the background and have the paella ready at your specific time.

We cook over an open fire because it is the traditional way to cook paella, makes it taste better and provides a festive atmosphere. That being said we realize that some locations prohibit open flames and in those cases we have the ability to cook over propane burners.​


We have come to learn that there is no “right” or “authentic” way to make paella and throughout Spain there are as many paella recipes as there are cooks. Our most popular paella contains saffron, chicken, bilbao chorizo, serrano ham, prawns, clams, mussels and seasonal vegetables but we can tailor the dish to your needs and likes. To give you an example, we have made what we call our Mexican Paella that uses home made achote paste and roasted poblano peppers in place of the traditional saffron - OR our winter paella that features farro, fennel and Frau Mani italian sausage.

We can accommodate special dietary requests from vegan to specific food allergies and have the capability to do more than one kind of paella at each event.
